\u00e1cidos vers\u00e1tiles"},"content":{"rendered":"\n<p>Por Kobe Lannoo, Global Lead Swine<\/p>\n\n\n\n<p>Los \u00e1cidos org\u00e1nicos se pueden definir como compuestos org\u00e1nicos con propiedades \u00e1cidas asociadas&nbsp;al&nbsp;grupo carboxilo&nbsp;\u201c-COOH\u201d.\u202fEs de gran importancia&nbsp;entender&nbsp;las diferentes propiedades qu\u00edmicas y,&nbsp;acciones de estos componentes para&nbsp;obtener una&nbsp;soluci\u00f3n&nbsp;\u00f3ptima&nbsp;de cara a los&nbsp;desaf\u00edos que se presenten.\u202fAunque los&nbsp;AGCM&nbsp;se pueden clasificar&nbsp;dentro de&nbsp;la categor\u00eda de \u00e1cidos org\u00e1nicos, su estructura qu\u00edmica difiere de los \u00e1cidos org\u00e1nicos est\u00e1ndar.\u202fDe esta manera, los&nbsp;AGCM&nbsp;demuestran&nbsp;su versatilidad en la&nbsp;cr\u00eda&nbsp;de animales sanos&nbsp;y&nbsp;ofrecen&nbsp;una amplia gama de efectos beneficiosos a nivel&nbsp;del&nbsp;animal y de&nbsp;la&nbsp;alimentaci\u00f3n.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong><strong>\u00bfAntibacteriano?\u202fpKa y HLB<\/strong>&nbsp;<\/strong><\/h2>\n\n\n\n<p>Los \u00e1cidos se pueden dividir en varios subgrupos seg\u00fan su estructura molecular y caracter\u00edsticas qu\u00edmicas (Figura 1).\u202fHay dos propiedades&nbsp;principales&nbsp;que determinan la capacidad antibacteriana y reductora del pH de los diferentes \u00e1cidos:&nbsp;el valor de pKa y HLB.&nbsp;<\/p>\n\n\n\n<p>Cada \u00e1cido tiene su propio valor de pKa, que es&nbsp;el pH al que el 50% del \u00e1cido&nbsp;est\u00e1&nbsp;en su forma no disociada y el&nbsp;otro&nbsp;50% en su forma disociada.\u202fSi el pH ambiental es m\u00e1s bajo que el valor de pKa, el \u00e1cido cambiar\u00e1 hacia su forma no disociada.\u202fCuando el pH ambiental es m\u00e1s alto que el valor pKa del \u00e1cido, el \u00e1cido cambiar\u00e1 hacia su forma disociada.\u202fPor eso,&nbsp;\u00e1cidos como el f\u00f3rmico (pKa = 3,75), l\u00e1ctico (pKa = 3,86), fum\u00e1rico (pKa = 3,02) y \u00e1cido c\u00edtrico (pKa = 3,10) son&nbsp;los t\u00edpicos&nbsp;\u00e1cidos reductores del pH;&nbsp;mientras que el \u00e1cido propi\u00f3nico (pKa = 4,88),&nbsp;el \u00e1cido but\u00edrico (pKa = 4,82), el \u00e1cido ac\u00e9tico (pKa = 4,76) y&nbsp;los AGCM&nbsp;(pKa = 5) permanecer\u00e1n menos disociados, lo que permitir\u00e1 que estos \u00e1cidos se acerquen a las bacterias cargadas negativamente y act\u00faen como antibacterianos, en lugar de reducir el pH.&nbsp;<\/p>\n\n\n\n<figure class=\"has-normal-font-size\">Incluso dentro del grupo de los \u00e1cidos antimicrobianos hay una gran diferencia en&nbsp;su&nbsp;eficacia.\u202fY esto puede&nbsp;deberse&nbsp;principalmente por las diferencias en el equilibrio hidr\u00f3filo lip\u00f3filo (HLB), que es una expresi\u00f3n de la relaci\u00f3n de partes hidr\u00f3filas&nbsp;e&nbsp;hidr\u00f3fobas en una mol\u00e9cula.\u202fUna membrana celular bacteriana consta de fosfol\u00edpidos que son&nbsp;anfif\u00edlicos, lo que significa que contienen una parte hidr\u00f3fila y una lip\u00f3fila.\u202fPara que un \u00e1cido sea un desestabilizador eficaz de la membrana celular bacteriana, el HLB del&nbsp;\u00e1cido debe ser similar al de la membrana bacteriana.\u202fEn concreto, los AGCM tienen una gran similitud&nbsp;en&nbsp;el&nbsp;HLB, lo que resulta en&nbsp;un&nbsp;mayor efecto antibacteriano (Tabla 1).&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" olor&nbsp;o&nbsp;el sabor tambi\u00e9n son factores importantes que determinan la aplicaci\u00f3n, el procesamiento y las acciones de los diferentes \u00e1cidos.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong><strong>Mecanismo&nbsp;de acci\u00f3n<\/strong>&nbsp;<\/strong><\/h2>\n\n\n\n<p>Los \u00e1cidos org\u00e1nicos tienen diferentes acciones en funci\u00f3n de sus caracter\u00edsticas qu\u00edmicas espec\u00edficas.\u202fLa regulaci\u00f3n de la acidez es&nbsp;probablemente el efecto m\u00e1s conocido de los \u00e1cidos org\u00e1nicos.\u202fLos \u00e1cidos tales como el \u00e1cido f\u00f3rmico, fum\u00e1rico y l\u00e1ctico&nbsp;normalmente&nbsp;se disocian cuando entran en contacto con el agua,&nbsp;reduciendo&nbsp;el pH.\u202fDe esta forma, los \u00e1cidos org\u00e1nicos con un valor de pKa bajo pueden ejercer un efecto bacteriost\u00e1tico en el animal, en el agua o en los piensos.\u202fUna reducci\u00f3n del pH en el est\u00f3mago tambi\u00e9n conduce a una mejor digesti\u00f3n de las prote\u00ednas.&nbsp;<\/p>\n\n\n\n<p>Un segundo grupo de \u00e1cidos tiene efectos antibacterianos directos.\u202fEste grupo es particularmente importante con respecto a la reducci\u00f3n de antibi\u00f3ticos&nbsp;y&nbsp;se trata&nbsp;\u00e1cidos con un valor de pKa relativamente altos.\u202fEstos \u00e1cidos permanecer\u00e1n sin disociar, desestabilizar\u00e1n la membrana celular microbiana y alterar\u00e1n el metabolismo bacteriano al reducir el pH intracelular y la intercalaci\u00f3n con el ADN.\u202fLos&nbsp;AGCM&nbsp;superan&nbsp;a cualquier otro tipo de \u00e1cidos a este respecto debido a su alto valor de pKa y su HLB \u00f3ptimo.\u202fAdem\u00e1s, los AGCM act\u00faan como antibacterianos directamente a nivel del est\u00f3mago en comparaci\u00f3n con los \u00e1cidos&nbsp;protegidos&nbsp;y son selectivos hacia&nbsp;las enterobacterias, sin afectar a los beneficiosos&nbsp;<em>Lactobacillus<\/em>.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"420\" caracter\u00edsticas qu\u00edmicas&nbsp;y el mecanismo de acci\u00f3n&nbsp;es posible definir&nbsp;la soluci\u00f3n m\u00e1s apropiada a cada desaf\u00edo.&nbsp;Para aplicaciones muy espec\u00edficas, los \u00e1cidos org\u00e1nicos simples podr\u00edan seguir siendo la&nbsp;mejor&nbsp;soluci\u00f3n.\u202fPero, por otro lado,&nbsp;gracias a&nbsp;la versatilidad de acciones y fortalezas,&nbsp;los AGCM&nbsp;ofrecen&nbsp;una gama m\u00e1s amplia de beneficios.\u202fAgrimprove&nbsp;ha desarrollado soluciones espec\u00edficas a cada desaf\u00edo al aplicar su larga experiencia con los
